Das sagt Marcus Hees über seinen Sekt: „Der Lesezeitpunkt wird nach einem idealen Querschnitt von aromatischer Traubenreife und dem potenziellen Alkohol festgelegt. Durch unsere kühlen Seitentallagen haben wird die Möglichkeit die Lese der Trauben für Sektgrundweine ganz knapp vor die Hauptlese zu setzen, wodurch man Grundweine mit einer höheren, aber gleichzeit sehr reifen Säure gewinnen kann. Flaschengärung und Lagerung auf der Hefe über einen Zeitraum von 14 Monaten, nur minimale Dosage, ca. 5 g/l Restzucker.“ Wir sagen: „Perfekter Stoff!"
